Su Xào (Stir Fried Chayote with Shrimp)
This is a dish my mom used to make me when I was kid. Really simple to make. Just peel and cut the chayote (you can find this at most Asian supermarkets and even some western ones) into long stripes. Peel and clean the shrimp and season with sesame oil, salt, sugar and black pepper. Put the shrimp in the pan first and cook for a minute or two. Then add the chayote pieces and cook for another 10 minutes. Taste delicious with just a bit of jasmine rice. =)
